Instead of paying high prices at the grocery store for pancake mix, make your own economically with just a few ingredients. Add water, cook and voila, you have yummy pancakes.
4 1/2 c. all-purpose flour
3/4 c. instant non-fat dry milk
1/3 c. granulated sugar
2 T. baking powder
1 T. baking soda
1 1/2 t. salt
water, for making pancakes
syrup, for serving
In a large bowl, stir together flour, powdered milk, sugar, baking powder, baking soda, and salt.
Store in a large, airtight container at room temperature.
When ready to make pancakes, preheat a non-stick griddle or large skillet to medium-high heat.
For every 1 c. pancake mix, whisk with 3/4 c. water. One cup of mix makes 4 to 5 pancakes.
Pour 1/4 c. pancake batter onto the preheated griddle. Cook pancakes until bubbles form before flipping. Flip over; cook second side until golden brown.
Serve hot with your favorite syrup.
Makes 30 pancakes.
