Creamy White Chicken Chili

Description

This easy and delicious soup will become a family favorite that you'll add to your recipe rotation. It's a creamy white chicken chili that's easily made on the stovetop and is ready in about 45 minutes.

Ingredients

1 lb. shredded rotisserie chicken
1 medium onion, chopped
1 1/2 t. garlic powder
1 T. olive oil
2 - 15 oz. cans Great Northern beans, drained and rinsed
14 1/2 oz. chicken broth
2 - 4 oz. cans diced green chiles
1 t. salt
1 t. dried oregano
1 t. ground cumin
1/2 t. black pepper
1/4 t. cayenne pepper
1 c. sour cream
1/2 c. heavy whipping cream
Optional: shredded cheese, tortilla chips, green onions, lime wedges, avocado slices, sliced jalapeños, for serving

In a large saucepan, heat the olive oil over medium heat; sauté the onion with the garlic powder until the onion becomes translucent.

Add the chicken, beans, chicken broth, green chiles, salt, oregano, cumin, black and cayenne peppers to the saucepan; stir well to combine. Bring the mixture to a boil.

Once boiling, reduce the heat; let the chili simmer uncovered for about 30 minutes.

After 30 minutes, remove the saucepan from the heat; stir in the sour cream and heavy whipping cream until the chili is creamy and smooth.

Serve the chili immediately, topped with shredded cheese, tortilla chips, green onions, lime wedges, and/or sliced jalapeños.
