Description
This easy and delicious soup will become a family favorite that you'll add to your recipe rotation. It's a creamy white chicken chili that's easily made on the stovetop and is ready in about 45 minutes.
Ingredients
- 1 lb. shredded rotisserie chicken
- 1 medium onion, chopped
- 1 1/2 t. garlic powder
- 1 T. olive oil
- 2 - 15 oz. cans Great Northern beans, drained and rinsed
- 14 1/2 oz. chicken broth
- 2 - 4 oz. cans diced green chiles
- 1 t. salt
- 1 t. dried oregano
- 1 t. ground cumin
- 1/2 t. black pepper
- 1/4 t. cayenne pepper
- 1 c. sour cream
- 1/2 c. heavy whipping cream
- Optional: shredded cheese, tortilla chips, green onions, lime wedges, avocado slices, sliced jalapeños, for serving
Steps
- In a large saucepan, heat the olive oil over medium heat; sauté the onion with the garlic powder until the onion becomes translucent.
- Add the chicken, beans, chicken broth, green chiles, salt, oregano, cumin, black and cayenne peppers to the saucepan; stir well to combine. Bring the mixture to a boil.
- Once boiling, reduce the heat; let the chili simmer uncovered for about 30 minutes.
