Slow Cooker Cowboy Soup with Ground Beef and Beans

Description

This hearty soup is made in the slow cooker with ground beef, three types of beans, corn, diced tomatoes, chilies, onion in a deliciously seasoned beef broth.

Ingredients

1 lb. ground beef
1 onion, chopped
2 cloves garlic, minced
15 oz. can diced tomatoes
15 oz. can kidney beans, drained and rinsed
15 oz. can pinto beans, drained and rinsed
15 oz. can black beans, drained and rinsed
15 oz. can corn, drained
10 oz. can diced tomatoes with green chilies
4 oz. can diced green chilies
1 packet taco seasoning mix
1 packet ranch dressing mix
4 c. beef broth
salt and pepper, to taste
shredded Cheddar cheese, sour cream, and chopped green onions, for garnish

In a skillet over medium-high heat, brown the ground beef until fully cooked; discard excess fat.

Add the onion and garlic to the skillet; sauté 2-3 minutes until the onion becomes translucent.

Transfer the beef, onion, and garlic to a slow cooker.

Add both canned tomatoes, the kidney, pinto, and black beans, corn, diced green chilies, taco seasoning, and ranch dressing mix to the slow cooker. Add the beef broth; stir. Season with salt and pepper, to taste.

Cover the slow cooker; cook on Low for 6-8 hours or on High for 3-4 hours.

Serve, garnished with shredded cheddar cheese, sour cream, and chopped green onions.

6-8 servings.
