Caramelized Onion and Herb Rice Casserole

Description

You'll be pleasantly surprised at how easy and delicious this savory rice casserole is. It can be served as a main dish or as a side dish.

Ingredients

  • 1 T. olive oil
  • 1 T. butter
  • 1 large onion, thinly sliced
  • 1 t. sugar
  • 1 1/2 c long-grain white rice
  • 10.5 oz. can beef consommé
  • 10.5 oz. can French onion soup
  • 1 1/2 c. water
  • 1/2 t. dried thyme
  • salt and pepper, to taste
  • fresh thyme or parsley, for serving

Steps

  1. Preheat oven to 425 degrees F. Grease a baking dish.
  2. Warm the oil and butter together in a large skillet over medium heat. Add the onion and sugar; cook, stirring frequently, until onions are very soft and caramelized, about 25-30 minutes.
  3. In the prepared baking dish, combine the rice, beef consommé, French onion soup, water, thyme, salt, and pepper; stir.
