Description
You'll be pleasantly surprised at how easy and delicious this savory rice casserole is. It can be served as a main dish or as a side dish.
Ingredients
- 1 T. olive oil
- 1 T. butter
- 1 large onion, thinly sliced
- 1 t. sugar
- 1 1/2 c long-grain white rice
- 10.5 oz. can beef consommé
- 10.5 oz. can French onion soup
- 1 1/2 c. water
- 1/2 t. dried thyme
- salt and pepper, to taste
- fresh thyme or parsley, for serving
Steps
- Preheat oven to 425 degrees F. Grease a baking dish.
- Warm the oil and butter together in a large skillet over medium heat. Add the onion and sugar; cook, stirring frequently, until onions are very soft and caramelized, about 25-30 minutes.
- In the prepared baking dish, combine the rice, beef consommé, French onion soup, water, thyme, salt, and pepper; stir.
