Slow Cooker Hamburger and Potato Soup

Description

Your slow cooker does most of the work making this satisfying, delicous soup. It's made with economical ingredients like ground beef, potatoes, onion, frozen veggies and cheese. It's perfect for chilly days when you want a comforting meal.

Ingredients

1 lb. ground beef
1 small sweet onion, diced
2 cloves garlic, minced
4 c. low-sodium chicken broth
3 medium Russet potatoes, peeled and diced
12 oz. frozen peas and carrots, optional
10.5 oz. can Cheddar cheese soup
1/2 t. black pepper
1 c. heavy cream
8 oz. Velveeta cheese, cut into cubes, optional

In a large skillet over medium-high heat, cook the ground beef and onion, crumbling the beef while cooking. Cook until the beef is no longer pink and the onion is softened, about 8-10 minutes. Discard excess grease.

Stir in the garlic; cook for 30 seconds until fragrant. (If using jarred garlic, add it directly into the slow cooker instead.)

Transfer the beef mixture to an 8 quart slow cooker. Add the chicken broth, potatoes, frozen peas and carrots, cheese soup, and pepper; stir.

Cover the slow cooker. Cook on Low for 7-8 hours or on High for 3-4 hours, until the potatoes are tender.

About 1 hour before serving, add the heavy cream and the Velveeta cheese. Cover. Allow the cheese to melt; stir until fully combined and creamy.

Serve.

6-8 servings.
