Love meatloaf, but want to try a new way to make it? This meatloaf is flavorful with ground beef and ground pork, mixed with cooked bacon, sauteed onions, mushrooms, Parmesan and Swiss cheese, and lots of seasonings.
1 lb. ground beef
1/2 lb. ground pork
1 c. bread crumbs
1/2 c. milk
1/2 c. grated Parmesan cheese
1/2 c. finely chopped onions
1 c. finely chopped mushrooms
4 slices bacon, cooked and crumbled
1 c. shredded Swiss cheese
2 large eggs, beaten
1 T. Worcestershire sauce
1 T. ketchup
1 t. garlic powder
1 t. dried thyme
1/2 t. salt
1/2 t. black pepper
1/2 c. ketchup, for topping
Preheat oven to 375 degrees F.
Cook bacon in a skillet until crispy; crumble. Do not clean the skillet.
In the same skillet, sauté the onions and mushrooms in until the mushrooms are tender and the onions are translucent. Set aside to cool.
Meatloaf:
In a large bowl, combine both ground meats, bread crumbs, milk, Parmesan cheese, cooked bacon, Swiss cheese, onions, and mushrooms; add eggs, Worcestershire sauce, ketchup, garlic powder, dried thyme, salt, and pepper. Mix together until well combined, but do not overmix.
Shape the meat mixture into a loaf; place in a baking dish or on a lined baking sheet. Spread the 1/2 c. ketchup evenly over the top of the meatloaf.
Bake for 60-70 minutes, or until the internal temperature reaches 160 degrees F. and meatloaf is cooked through.
Allow the meatloaf to rest 10 minutes before slicing to allow the juices to distribute, which makes slicing easier.
Serve warm.
