Ingredients
- 1 - 1 1/2 lb. ground beef
- 1 can Ranch style beans
- 1 can Rotel tomatoes with juices
- 1 can whole kernel corn, drained
- 1 can cream style corn
- 2 boxes Jiffy cornbread mix, plus eggs and milk as listed in directions
- shredded cheese, sour cream or hot sauce, for optional serving
Steps
- Preheat oven to 400 degrees F.
- In a large skillet, brown the ground beef with onion powder, garlic powder, chili powder, cumin, and salt. Discard grease.
- Add Rotel tomatoes, Ranch style beans and whole kernel corn to the ground beef; bring to a boil; lower to let simmer while preparing the cornbread.
