Ingredients

1 - 1 1/2 lb. ground beef
1 can Ranch style beans
1 can Rotel tomatoes with juices
1 can whole kernel corn, drained
1 can cream style corn
2 boxes Jiffy cornbread mix, plus eggs and milk as listed in directions
shredded cheese, sour cream or hot sauce, for optional serving

Preheat oven to 400 degrees F.

In a large skillet, brown the ground beef with onion powder, garlic powder, chili powder, cumin, and salt. Discard grease.

Add Rotel tomatoes, Ranch style beans and whole kernel corn to the ground beef; bring to a boil; lower to let simmer while preparing the cornbread.

In a bowl, pour in the 2 boxes of cornbread mix, with the ingredients listed on the package directions; stir well. Add the cream style corn; stir.

Pour the ground beef mixture in a 13x9 casserole dish; top with the cornbread mixture.

Bake for 20-30 minutes, until cornbread is golden.

Serve plain or with optional toppings.
