This is an easy, delicious breakfast to serve anytime. It could also make a great lunch or dinner.
4 slices thick-cut bacon
2 ripe avocados, peeled and pitted
4 slices artisan bread
4 eggs
2 T. honey, warmed
salt and pepper, to taste
red pepper flakes, optional
In a skillet over medium heat, cook the bacon until crispy; drain a paper towel-lined plate.
In the same skillet, fry the eggs, sunny side up, over-easy, or over-hard.
Toast the artisan bread until golden and crispy.
Mash the avocados in a bowl; season with salt and pepper. Spread the avocado on each slice of toast. Place a fried egg on top of the avocado.
Break the bacon into pieces to fit on the toast; place the eggs on top.
Drizzle on warm honey; sprinkle on red pepper flakes, if desired.
