You can serve these satisfying, delicous sandwiches in about 20 minutes. They make a great lunch or dinner option.
Ingredients
- 1/2 c. cottage or ricotta cheese
- 1 t. olive or canola oil
- 1 clove garlic, minced
- 1 t. dried basil
- 1/2 t. dried oregano
- 1/4 t. salt
- 1/16 - 1/8 t. black pepper
- 1/4 c. grated Parmesan cheese
- 8 oz. shredded Mozzarella cheese (about 2 c.)
- 10 - 14 slices bread (depending on size)
- 2 T. softened butter
Steps
- Cheese Mixture:
- If using large curd cottage cheese, blend until mostly smooth.
- In a medium bowl, mix together the cottage or ricotta cheese with the oil, garlic, basil, oregano, salt, and pepper. Stir in the Parmesan cheese until well combined. Gently fold in the shredded Mozzarella cheese.
