You can serve these satisfying, delicous sandwiches in about 20 minutes. They make a great lunch or dinner option.
1/2 c. cottage or ricotta cheese
1 t. olive or canola oil
1 clove garlic, minced
1 t. dried basil
1/2 t. dried oregano
1/4 t. salt
1/16 - 1/8 t. black pepper
1/4 c. grated Parmesan cheese
8 oz. shredded Mozzarella cheese (about 2 c.)
10 - 14 slices bread (depending on size)
2 T. softened butter
Cheese Mixture:
If using large curd cottage cheese, blend until mostly smooth.
In a medium bowl, mix together the cottage or ricotta cheese with the oil, garlic, basil, oregano, salt, and pepper. Stir in the Parmesan cheese until well combined. Gently fold in the shredded Mozzarella cheese.
Assembly:
Lightly butter one side of each slice of bread. Place half of the slices, buttered side down, on a skillet or griddle over medium heat. Evenly distribute the cheese mixture over the bread. Place the remaining bread on top, with the buttered side up.
Grill:
Cook the sandwiches over medium heat for about 3-4 minutes, until the bread is golden brown. Flip carefully; cook the second side for an another 3-4 minutes, or until the bread is browned and the cheese is fully melted.
Serve:
Serve immediately.
