You'll add this meatloaf to your meal rotation because it's so tasty and easy. It's moist and full of flavor because it's made from a combination of ground beef and ground pork and is covered in a rich, creamy mushroom gravy.
Meatloaf:
1 c. fresh breadcrumbs
1/2 c. milk
2 large eggs, lightly beaten
1 c. diced onion
1 lb. ground beef
1 lb. ground pork
1 T. Worcestershire sauce
1 t. garlic powder
3/4 t. salt
1/2 t. black pepper
1/2 t. dried thyme
1 T. chopped fresh parsley
Mushroom Gravy:
2 T. meatloaf drippings
2 T. butter
1 lb. mushrooms, sliced
1/4 c. all-purpose flour
1 3/4 c. beef broth
1 t. Worcestershire sauce
1/4 t. garlic powder
1/4 c. heavy cream
1/2 T. balsamic vinegar
Meatloaf:
Preheat oven to 375 degrees F. Grease a 9x13 inch baking dish.
Place breadcrumbs in a large bowl; add milk; stir.
Add eggs, onion, ground beef, ground pork, garlic powder, salt, black pepper, thyme, and parsley; mix gently just until evenly mixed. Do not overmix.
Shape mixture into a 9×5 inch meatloaf; place in the prepared baking dish.
Bake 60 minutes.
Meatloaf Gravy:
In a large non-stick skillet, heat the meatloaf drippings and butter over medium-high heat; add mushrooms; cook until browned. Stir in flour; cook 1 minute.
Gradually whisk in broth; add Worcestershire sauce and garlic powder; bring to a simmer; simmer for 2-3 minutes to thicken. Stir in heavy cream and vinegar.
Add salt and pepper to taste, if desired.
Serve with the gravy spooned over the meatloaf.
