This Italian casserole is so easy to make and delicious, you'll put it on your meal rotation. Stuff the manicotti pasta the easy way using string cheese, then cover the pasta in an Italian sausage and marinara sauce and more cheese.
8 oz. package manicotti pasta
1 lb. ground Italian sausage (or ground beef)
1/2 - 1 onion, chopped
24-26 oz. marinara/spaghetti sauce
10 -14 string cheese sticks
1 c. shredded Mozzerella cheese
1 c. shredded Parmesan cheese
1/4 c. chopped fresh basil or parsley
Preheat the oven to 350 degrees.
Cook pasta according to package directions; drain.
While the pasta is cooking, cook and crumble the Italian sausage with the chopped onion in a skillet over medium heat. Discard the fat. Stir in the marinara sauce.
Pour half of the sausage/ marinara mixture into a greased 9x13 casserole dish; spread out evenly.
Insert the string cheese sticks into the pasta sticks; place them in the casserole dish.
Cover the top with the remaining sausage and sauce mixture. Sprinkle both cheeses over the top. Cover the dish with aluminum foil.
Bake for 25 minutes; remove the foil; bake for another 5-10 minutes until melted and bubbling.
Remove from the oven
Serve, garnished with the fresh basil or parsley.
