Ingredients
- 1 lb. linguine pasta
- 3 T. extra virgin olive oil
- 3-4 cloves garlic, thinly sliced
- 15 oz. can fire roasted diced tomatoes
- 1/4 c. fresh basil
- 1/4 c. grated Pecorino Romano cheese, optional
Steps
- Cook the linguine in a large pot of well salted boiling water according to package directions until al dente, 8-12 minutes; drain.
- While the pasta is cooking, add oil to a large non-stick skillet with the garlic; saute 1-2 minutes.
- Add the tomatoes and basil; heat through. Add the drained linguine to the skillet; toss to coat.
