You can serve this restaurant's pasta dish at home. It's quick, easy to make, economical and delicious.
1 lb. linguine pasta
3 T. extra virgin olive oil
3-4 cloves garlic, thinly sliced
15 oz. can fire roasted diced tomatoes
1/4 c. fresh basil
1/4 c. grated Pecorino Romano cheese, optional
Cook the linguine in a large pot of well salted boiling water according to package directions until al dente, 8-12 minutes; drain.
While the pasta is cooking, add oil to a large non-stick skillet with the garlic; saute 1-2 minutes.
Add the tomatoes and basil; heat through. Add the drained linguine to the skillet; toss to coat.
Serve with grated Pecorino Romano cheese, if desired.
