You'll love how easy this meatloaf is to prepare. The stuffing mix with its herbs makes it delicious and flavorful. The gravy is an added bonus.
Meatloaf:
6 oz. box Stove Top Stuffing Mix, any flavor
3/4 c. beef broth (low or no sodium is fine)
2 large eggs, beaten
2 T. Worcestershire sauce
2 lb. lean ground beef (at least 80/20)
Gravy:
2 T. butter
2 T. all-purpose flour
2 c. beef broth
1 T. Worcestershire sauce
1/2 t. black pepper
Preheat the oven to 375 degrees F. Spray a 9x13 inch baking dish with non-stick cooking spray; set aside.
Add the stuffing mix to a large bowl; stir in the beef broth; let sit 5 minutes.
Add the eggs; add Worcestershire sauce; stir to combine.
Add the ground beef; mix well using your hands, but don't overmix or it could become tough.
Add the mixture to the baking dish, forming it into an oval shape. Mke sure it's the same thickness all the way through for even cooking.
Bake 45-50 minutes until the internal temperature reaches 160 degrees F. Allow to sit at room temperature and cool slightly while making the gravy.
In a medium saucepan, melt the butter over medium heat. Add the flour; whisk it in, cooking for 1 minute. For a thicker gravy, add an extra tablespoon of flour.
Pour in the beef broth slowly while whisking constantly to avoid lumps. Stir in the Worcestershire sauce and black pepper. Bring to a simmer; simmer for 5 minutes until thickened slightly.
Transfer the meatloaf to a serving platter.
Brush the meatloaf all over with the gravy.
Serve slices with gravy over each portion.
