Roasted Cranberry and Goat Cheese Flatbreads

Description

Impress family and guests with this delicious and easy to make appetizer, snack or light meal. The cranberries provide the tart goodness, the goat cheese provides tangy cheese all on top of a crispy flatbread.

Ingredients

1 1/2 c. fresh cranberries
3 t. dark or amber pure maple syrup
1 T. finely chopped shallot
1/2 t. dried thyme, chopped
1/4 t. salt
2 flatbreads (14 oz. total)
4 oz. fresh goat cheese, crumbled

Preheat the oven to 375 degrees F.

Rinse the cranberries; drain.

In an 8×8 inch baking dish, mix together the cranberries, maple syrup, shallot, thyme, and salt.

Roast the mixture for about 15 minutes, stirring once or twice, until the cranberries burst and the mixture starts to bubble and caramelize around the edges. Remove from the oven; stir to break down the cranberries into a thick, jam-like consistency; set aside.

Lay the flatbreads down on a clean work surface. Spread the warm cranberry mixture evenly across both flatbreads. Sprinkle the crumbled goat cheese on top.

Place the flatbreads directly on the oven rack. Bake 8-10 minutes, or until the goat cheese softens and the flatbread turns crispy. Remove from the oven.

Serve warm.
