This easy to make fried rice is better than take out. Serve it as a side dish or entree. It's made with day old rice, frozen veggies, and eggs and is ready in about half an hour.
3 c. day old cooked long grain white or Jasmine rice, cold
2 T. sesame oil
1 c. frozen peas and carrots, thawed
1 onion, chopped
1 T. minced garlic (about 3 cloves)
2 eggs, slightly beaten
3 T. soy sauce
black pepper, to taste
chopped green onion, for garnish
Over medium heat, add the oil to a large pan. Saute onion and garlic until fragrant. Add peas; stir fry until tender.
Lower the heat to medium-low; push the mixture off to one side; pour beaten eggs on the empty side of the pan; stir fry until cooked. Add the rice and soy sauce; blend all together. Stir fry until thoroughly heated.
Serve, seasoned with black pepper and garnished with green onions.
