Description
This super easy to prepare olive oil pasta can be served as a main dish or as a side dish. It's economical with just a few simple ingredients and delicious.
Ingredients
- 1 lb. spaghetti
- 2 T. salt
- 1/4 c. extra virgin olive oil
- 8 cloves garlic, minced
- 1/2 t. crushed red pepper flakes, optional
- 2 T. extra virgin olive oil
- 2 t. lemon juice
- 3 T. minced fresh parsley
- grated Parmesan cheese, for optional serving
Steps
- Bring a large pot of water to a boil; add the salt; cook following package directions.
- In a small saucepan, heat the extra virgin olive oil over low heat for 1 minute. Add the minced garlic and 1/2 t. crushed red pepper flakes, if using. Stir; cook for 1 minute. Remove from heat.
- Drain spaghetti; transfer back into the pot or to a large bowl. Pour the olive oil mixture and another 2 T. extra virgin olive oil over the spaghetti; toss. Add the lemon juice and fresh parsley. Toss until the pasta is coated.
