Description

This super easy to prepare olive oil pasta can be served as a main dish or as a side dish. It's economical with just a few simple ingredients and delicious.

Ingredients

1 lb. spaghetti
2 T. salt
1/4 c. extra virgin olive oil
8 cloves garlic, minced
1/2 t. crushed red pepper flakes, optional
2 T. extra virgin olive oil
2 t. lemon juice
3 T. minced fresh parsley
grated Parmesan cheese, for optional serving

Bring a large pot of water to a boil; add the salt; cook following package directions.

In a small saucepan, heat the extra virgin olive oil over low heat for 1 minute. Add the minced garlic and 1/2 t. crushed red pepper flakes, if using. Stir; cook for 1 minute. Remove from heat.

Drain spaghetti; transfer back into the pot or to a large bowl. Pour the olive oil mixture and another 2 T. extra virgin olive oil over the spaghetti; toss. Add the lemon juice and fresh parsley. Toss until the pasta is coated.

Serve topped with Parmesan cheese, if desired.

3-6 servings.
