Ingredients
16 oz. package ground breakfast sausage
1/4 c. all-purpose flour
2 c. milk
black pepper, to taste
1 T. olive oil, or as needed
12 inch pre-baked pizza crust
non-stick cooking spray
6 eggs
1/4 c. milk
1 c. shredded Cheddar cheese

Preheat oven to 400 degrees F.
Heat a large skillet over medium heat. Cook sausage until browned, stirring occasionally, 5 - 7 minutes. Discard grease. Stir in flour until dissolved; add 2 c. milk, stirring occasionally until gravy reaches desired consistency, about 10 minutes. Season gravy with black pepper.
Place pizza crust on a baking sheet; brush with olive oil. Spread half of the gravy over the olive oil.
Spray a large skillet with non-stick cooking spray; warm over medium-high heat.
Whisk the eggs and 1/4 c. milk together in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes.
Top pizza with the eggs and Cheddar cheese.
Bake until the crust is golden brown and the top is bubbling, about 10 - 15 minutes.
