Ingredients
Base:
1 lb. ground beef
1 onion, chopped
2 cloves garlic, minced
1 t. salt
1/2 t. black pepper
Vegetables:*
1 c. carrots, sliced
1 c. potatoes, diced
1 c. corn kernels
1 c. green beans, chopped
Sauce:
10.5 oz. can cream of mushroom soup
1 t. dried thyme
1 t. dried parsley
1 c. shredded Cheddar cheese

Base:
Brown ground beef in skillet; discard fat. Add onion and garlic; cook until softened. Transfer to a slow cooker.
Add all of the vegetables. Stir in the soup and seasonings; stir gently to combine. Cover. Cook on Low for 6-8 hours until the vegetables are tender.
Add the Cheddar cheese 30 minutes before ready to serve.
Let stand 10 minutes before serving.
6 servings.
*The vegetables should be cut into a similar size for even cooking.
Leftovers should be refrigerated and will keep 3-4 days.
The casserole freezes well for up to 3 months.
