Description
This slow cooker meatloaf is satisfying, comforting and delicious. It combines the flavors of French onion soup with caramelized onions and gooey cheese.
Ingredients
3 or 4 large sweet onions, sliced
1 T. olive oil
1 t. sea salt
1/2 to 1 t. freshly ground black pepper
1 t. sugar
4 T. salted butter, cubed
1 lb. ground beef
1 c. Italian herb bread crumbs
1 c. milk
1 egg
1 oz. package French onion soup mix
1/2 c. cooking sherry
1/2 t. Worcestershire sauce
4 oz. Swiss, Gruyère or Provolone cheese
fresh thyme sprigs, for garnish

Lay the sliced onions in a 6 qt. slow cooker with the olive oil. Sprinkle on salt, pepper, and sugar. Add the cubed butter to the top. Cook on Low for 9 hours. (Or, to save time, cook the onions in a skillet until caramelized, about 15-20 minutes and then place in the slow cooker.)
In a bowl, mix together the ground beef, bread crumbs, milk, egg, and onion soup mix. Shape into a loaf.
Pour the cooking sherry and Worcestershire sauce over the onions. Place the meatloaf on top of the onions. Cook on High for 3 hours or until the internal temperature reaches 160 degrees F.
Top meatloaf with the cheese slices. Cook for another 20-30 minutes until cheese has melted.
Serve the meatloaf with the caramelized onions and juice from the slow cooker and garnished with fresh thyme.
