Description
This casserole is great anytime but especially for St. Patrick's Day. Instead of making individual Reuben sandwiches for everyone, make this dish that's full of the same flavors as the classic sandwiches.
Ingredients
8 slices rye bread, cubed
1 lb. thinly sliced or shredded corned beef
14 oz. can sauerkraut, well drained and rinsed
2 c. grated Swiss cheese
1 c. Thousand Island dressing

Preheat oven to 350 degrees F. Lightly grease a 9x13 inch baking dish.
Cube the rye bread, shred or thinly slice the corned beef, and drain and rinse the sauerkraut.
Layer half of the bread in the prepared baking dish. Top with half of the corned beef, and then half of the sauerkraut. Sprinkle half of the grated cheese over the sauerkraut layer.
Evenly drizzle half of the Thousand Island dressing over the cheese layer.
Repeat the layering with the remaining ingredients in this order: rye bread, corned beef, sauerkraut, and Swiss cheese.
Drizzle the remaining Thousand Island dressing evenly over the top.
Cover the dish with aluminum foil. Bake about 25-30 minutes, or until the cheese is melted and bubbly.
When done, discard the foil. Allow the Reuben Bake to cool slightly before serving.
Serve hot.
