Description
Make breakfast pizzas at home with a few simple ingredients. Toasted English muffins topped with breakfast sausage, sawmill gravy, scrambled eggs and cheese is the perfect way to start your day.
Ingredients
1 lb. breakfast sausage
Sawmill Gravy:
1/4 c. sausage drippings, adding butter if insufficient drippings
1/4 c. flour
2 c. milk
1 package English muffins
8 eggs
1/2 t. salt, or to taste
1/4 t. black pepper, or to taste
8 oz. mild Cheddar cheese, thinly sliced

Cook sausage in a skillet until well done. Remove from skillet. Discard all but 1/4 c. fat.
Sawmill Gravy:
To the reserved fat drippings in the skillet, add flour; stir with a fork. Cook and stir over medium heat 5 to 10 minutes or until mixture starts to turn golden.
Slowly add milk to the roux, stirring constantly. Cook gravy until it boils and thickens.
Turn oven broiler on High.
Lightly toast English muffins while making the gravy.
Scramble eggs in a non-stick skillet, adding a small dash of milk to make them fluffier, if desired. Season to taste with salt and black pepper.
Assemble pizzas on a baking sheet.
Spread the sawmill gravy on the open-faced toasted English muffins; top with scrambled eggs, a cheese slice, and sausage.
Broil until cheese is bubbly and melted.
