Description
Kid tested, mother approved homemade chicken noodle soup. You'll make this soup often because it's so quick, easy and delicious.
Ingredients
- olive oil, for cooking the chicken
- 2 -3 boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 2 carrots, peeled, halved and sliced crosswise
- 2 stalks celery, thinly sliced
- 1 medium onion, finely diced
- 1 clove garlic, grated
- 3/4 t. ground thyme
- 2 c. chicken broth
- 2 chicken bouillon cubes
- 4 c. cooked egg noodles
- 2 - 3 T. finely minced fresh parsley, for garnish
Steps
- Cook enough egg noodles according to package directions to make 4 cups. Drain; set aside.
- While the noodles are cooking, deason the chicken with salt and pepper. Drizzle olive oil in a heavy pot over medium-high heat.
- Cook the chicken on both sides until fully cooked through, about 4 minutes per side; set aside on a plate. Dice the chicken into small, bite sized pieces.
