Description
Kid tested, mother approved homemade chicken noodle soup. You'll make this soup often because it's so quick, easy and delicious.
Ingredients
olive oil, for cooking the chicken
2 -3 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
2 carrots, peeled, halved and sliced crosswise
2 stalks celery, thinly sliced
1 medium onion, finely diced
1 clove garlic, grated
3/4 t. ground thyme
2 c. chicken broth
2 chicken bouillon cubes
4 c. cooked egg noodles
2 - 3 T. finely minced fresh parsley, for garnish

Cook enough egg noodles according to package directions to make 4 cups. Drain; set aside.
While the noodles are cooking, deason the chicken with salt and pepper. Drizzle olive oil in a heavy pot over medium-high heat.
Cook the chicken on both sides until fully cooked through, about 4 minutes per side; set aside on a plate. Dice the chicken into small, bite sized pieces.
Add the carrots, celery, onion and garlic to the pot; cook, stirring occasionally. Sprinkle on the thyme and 1/2 t. black pepper. Reduce heat to low; cook the vegetables for 3 to 4 minutes.
Transfer the chicken to the pot. Add the broth, bouillon cubes and 2-3 c. water. Raise the heat to bring it to a gentle boil; simmer for 10 minutes. Turn the heat off. Stir in the cooked noodles.
Serve hot, garnished with parsley.
