Description
Close your eyes and you will feel like you're feasting on this tasty dish in Hawaii. The pork tenderloin is tender and juicy along with a fresh coleslaw blend and chunks of pineapple.
Ingredients
20 oz. can pineapple chunks in juice
1/4 c. light brown sugar
1/4 c. less-sodium soy sauce
1 small onion, thinly sliced
2 t. minced garlic
1/2 t. ground ginger
2 1/4 lb. pork tenderloin, cut into 4 pieces
14 oz. pkg. classic coleslaw blend
1/2 c. non-fat plain Greek yogurt
3 1/2 T. apple cider vinegar
1 t. honey
24 ct. pkg. 6-inch Schnucks taco-style yellow corn tortillas, toasted

In a large bowl, stir together pineapple with the juice, brown sugar, soy sauce, onion, garlic and ginger until well combined.
In a large slow cooker, add the pork; top with the pineapple mixture.
Cover. Cook on Low until pork is tender and pulls apart easily with a fork, about 6 hours.
Meanwhile, in a large bowl, whisk together the yogurt, vinegar and honey until smooth. Season with salt and pepper, if desired. Stir in the coleslaw blend until coated. Cover. Refrigerate at least 30 minutes.
Turn off the slow cooker. Shred the pork.
Serve with coleslaw and toasted tortillas.
6 servings.
Tip: To save about 10-15 minutes from the cooking time, be sure that the meat is evenly dispersed in the slow cooker.
