Close your eyes and you will feel like you're feasting on this tasty dish in Hawaii. The pork tenderloin is tender and juicy along with a fresh coleslaw blend and chunks of pineapple.
Ingredients
- 20 oz. can pineapple chunks in juice
- 1/4 c. light brown sugar
- 1/4 c. less-sodium soy sauce
- 1 small onion, thinly sliced
- 2 t. minced garlic
- 1/2 t. ground ginger
- 2 1/4 lb. pork tenderloin, cut into 4 pieces
- 14 oz. pkg. classic coleslaw blend
- 1/2 c. non-fat plain Greek yogurt
- 3 1/2 T. apple cider vinegar
- 1 t. honey
- 24 ct. pkg. 6-inch Schnucks taco-style yellow corn tortillas, toasted
Steps
- In a large bowl, stir together pineapple with the juice, brown sugar, soy sauce, onion, garlic and ginger until well combined.
- In a large slow cooker, add the pork; top with the pineapple mixture.
- Cover. Cook on Low until pork is tender and pulls apart easily with a fork, about 6 hours.
