Orange Sauce: Combine all of the orange sauce ingredients in a bowl; whisk; set aside.
Chicken: Add the egg, salt, pepper, and 1 T. oil to a shallow bowl; whisk.
In a second shallow bowl, add 1/2 c. corn starch and flour; stir well.
Add enough oil to a large skillet over medium-high heat to deep fry the chicken. Heat the oil to 375 degrees F.
Once the oil is hot, dip chicken pieces in the egg mixture first; dredge in the flour mixture; add to the skillet.
DON'T overcrowd the chicken pieces in the skillet; fry in batches, as needed.
Fry the chicken for 3 to 4 minutes or until golden and crispy outside. Once fried, transfer to a cooling rack.
Discard most of the oil from the skillet, leaving about 1 T. oil. Stir the prepared orange sauce, then add it to the skillet; bring to a boil.
Turn off the heat; add cooked chicken to the sauce; stir until well-coated.
Serve with your favorite cooked rice, garnished with orange zest, sesame seeds, and green onions, if desired.
