Description
Restaurants seem to have the perfect baked potato every time and now you can too. The outside is crispy, and the inside is fluffy and delicious. Serve it as a side dish, or as a main dish with toppings of your choice.
Ingredients
1 medium-to-large Russet potato, scrubbed clean
1–2 t. melted butter or olive oil
pinch of coarse Kosher or sea salt
pinch of freshly ground black pepper
Optional Toppings: Cheddar cheese, bacon bits, sour cream, butter, green onion slices, chives, chili, cooked broccoli, guacamole

Preheat the oven to 450 degrees F. Line a baking sheet with foil or parchment paper.
Use a dinner fork to poke the potato all over at least 10 times. Place the potato on the prepared baking sheet.
Round One: Bake for 25 minutes. Remove baking sheet from the oven.
Brush potato with butter or oil. Use a pastry brush to brush the potato with melted butter or olive oil until it's completely coated on all sides. Sprinkle the potato with a generous amount of Kosher or sea salt.
Place the potato back on the baking sheet, opposite-side-up, so that it cooks evenly on both sides.
Round Two: Bake for another 20 minutes. Use an oven mitt to carefully squeeze the potato to check for doneness. If the insides are soft and give under pressure, remove the potato from the oven. Otherwise, continue to cook in 5 minute increments until the potato is soft.
Use a knife to slice halfway through the potato lengthwise; give it a gentle squeeze to open.
Serve immediately with desired toppings.
