Description

You can enjoy this wonderful, healthy meal for lunch or dinner in about 30 minutes. The caprese melt is made with deli turkey, tomatoes, cheese and spinach cooked in tortillas. They are served with a side dish of a berry yogurt.

Ingredients

4 T. balsamic vinegar
1 t. honey
1 1/2 c. frozen berry medley, thawed
pesto
6 - 8" tortillas
16 oz. deli turkey breast*
6 slices fresh Mozzarella cheese
12 slices Roma tomatoes from about 2 medium
2 c. packed baby spinach
3 c. non-fat plain Greek yogurt

In a small bowl, whisk together the balsamic vinegar and honey; add the berries. Cover. Refrigerate about 30 minutes.

Meanwhile, spread a thin layer of pesto on 1 side of the tortillas. Add turkey, cheese, tomato and spinach, each in its own separate quadrant. Fold tortillas in half, twice.

In a medium skillet over medium heat and working in batches as needed, cook tortillas until golden brown, 3–5 minutes per side.

Transfer to a platter. Cover to keep warm.

Divide yogurt among 6 small bowls; top with the berry mixture.

Serve with warm tortilla melts.

6 servings.

* You can sub in salmon for the turkey, or omit the protein completely.
