4 medium Russet potatoes
4 T. salted butter, melted
2 T. olive oil
2 T. minced garlic
1 t. salt
1 t. dried basil
1 t. dried oregano
1 t. dried parsley
1/2 t. black pepper
1/2 c. grated Parmesan cheese, grated

Preheat the oven to 400 degrees F.
Scrub the potatoes thoroughly to remove dirt. Dry.
Place a potato on a cutting board; position a butter knife through each side to prevent cutting through the potato completely. Use a sharp knife to slice the potato crosswise into 1/8" thick slices, being careful to keep the base intact. Repeat with the remaining potatoes.
Melt the butter in a small bowl. Stir in the olive oil, garlic, salt, basil, oregano, parsley, and pepper until well combined.
Rub the butter mixture into the slits and exterior the potatoes.
Place the potatoes in a baking dish or a baking pan to catch drippings.
Bake for 1 hour, or until the potatoes are tender.
After the hour, increase the oven temperature to 425 degrees F.
Sprinkle the Parmesan cheese evenly over the potatoes. Return potatoes to the oven. Bake for another 10 minutes, or until the cheese is golden and the potatoes are crisp.
Remove the potatoes from the oven; cool slightly before serving.
