Description

You can easily make refried beans at home in your slow cooker. They're prepared with just a few economical ingredients and make the best, creamiest and delicious side dish for your Mexican dinner.

Ingredients

3 c. dry pinto beans
1 medium yellow onion, diced
1 medium jalapeno, stemmed and finely minced/diced *
4 t. minced garlic
9 c. water **
1 t. salt
1/2 c. salted butter

Rinse the beans under cold water; remove debris. Drain.

Place beans in a 6 to 8 quart slow cooker.

Add the diced onion, jalapeno and minced garlic to the slow cooker with the beans.

Pour in the water and add salt; stir. Cover. Cook on Low 8 to 10 hours, or until the beans are very soft.

Drain the beans in a colander, reserving some of the cooking liquid.

Transfer the beans to a food processor or return them to the slow cooker and use a potato masher or an immersion blender to puree the beans to desired consistency, adding some of the reserved cooking liquid, as needed until reaching the desired texture.

Stir in the salted butter until completely melted.

Serve hot.
