Teriyaki Chicken and Pineapple Foil Packets

Everyone will love the healthy, sweet and tangy flavor of these teriyaki chicken breasts. They're easy to prepare, quick to cook and there is very little clean up.
Ingredients
2 boneless, skinless chicken breasts
olive oil
1 c. fresh pineapple chunks
1/4 c. teriyaki sauce, divided
1 T. olive oil
1 red bell pepper, sliced
1 carrot, thinly sliced
1 zucchini, sliced
salt and pepper
2 green onions, chopped for garnish

Preheat oven to 400 degrees F.*
Place 2 large pieces of aluminum foil on the countertop.
Place a chicken breast in the center on each foil piece; drizzle on olive oil; season with salt and pepper.
Top each chicken breast with pineapple chunks, bell pepper slices, carrot slices, and zucchini slices.
Pour the teriyaki sauce evenly over the breasts and vegetables.
Fold the sides of the each foil piece over the chicken and vegetables, creating a sealed packet.
Place the foil packets on a baking sheet.
Bake for about 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165 degrees F.
Be cautious of the steam when opening the packets.
Serve, garnished with chopped green onions.
Add your favorite vegetables to the foil packets for extra flavor and nutrition.
*These foil packets could also be cooked on a grill, if desired.
