Description
This salad is a quick, easy one to prepare. It's loaded with rotisserie chicken, penne pasta and all of the usual ingredients in the classic caesar salad with a creamy homemade dressing.
Ingredients
Dressing:
1 T. Dijon mustard
2 T. fresh lemon juice
1/4 c. mayonnaise
1 T. garlic powder
1 t. anchovy paste (or a little Worcestershire sauce)
1/4 c. grated Parmesan cheese
Pasta Salad:
12 oz. uncooked penne
1 heart of Romaine lettuce
2 c. shredded rotisserie chicken
1 c. croutons
1 t. salt
1 t. black pepper

Dressing:
In a small bowl, whisk together the mustard, fresh lemon juice, mayonnaise, garlic powder, anchovy paste or Worcestershire sauce, and Parmesan cheese until well combined; set aside.
Bring a large pot of well salted water to a boil. Add the pasta; cook according to package instructions until al dente. Drain the pasta; rinse under cold water to stop the cooking process; set aside to cool.
While the pasta is cooking, wash and chop the Romaine lettuce into bite sized pieces.
In a large bowl, combine the cooled pasta, rotisserie chicken, Romaine lettuce, and croutons. Season with salt and black pepper.
Pour the dressing over the salad; toss together until well coated and ingredients are evenly distributed.
Serve, garnished with more Parmesan cheese and black pepper, if desired.
8 servings.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
If you notice some separation after refrigeration, just toss before serving. The croutons may lose their crunchiness over time when stored in the salad.
