Chicken Wings:
Place a wire rack on a baking sheet.

Place the chicken wings on a large cutting board. Pat the wings as dry as possible with paper towels.

In a small bowl, stir together the baking powder, salt, black pepper, and paprika; sprinkle evenly over the wings; toss to coat.

Arrange the wings in a single layer on the wire rack. Refrigerate uncovered for 12 to 24 hours to allow the coating to adhere and for the skin to dry.

When ready to cook, preheat the oven to 425 degrees F.

Transfer the wings directly from the refrigerator to the preheated oven. Roast for 30 minutes, or until the wings are crispy and golden brown, and the internal temperature reaches 165 degrees F. Cooking time may vary depending on the size of the wings and your oven.

Garlic Parmesan Sauce:
While the wings are baking, make the garlic Parmesan sauce.

In a small bowl, melt the butter; stir in 1/3 the Parmesan cheese, garlic powder, salt, and black pepper until well combined.

Once the wings are cooked, transfer them to a large bowl. Drizzle the garlic Parmesan sauce over the wings; toss until evenly coated.

Serve immediately.

6 servings.

Tip: If pressed for time, preheat the oven to 250 degrees F. Bake the wings for about 45 minutes to 1 hour. Remove the wings; increase the oven temperature to 425 degrees F. Place the wings back in the oven for another 30-45 minutes, or until they reach an internal temperature of 165 degrees F.
