Not much time to cook a delicious meal? Well, that is just an excuse, because you have time to cook this wonderful dish. In under 30 minutes, you will have a creamy pasta dish that everyone will think you slaved over the stove to cook.
1/2 lb. pasta, your favorite
2 T. finely chopped chives
1/2 c. cream or heavy cream
1/2 c. freshly grated Parmesan cheese
2 t. olive oil
2 large eggs
1/2 lb. bacon, crisply fried and crumbled
salt, to taste
freshly ground black pepper, to taste
In a large bowl, mix eggs, cream, Parmesan cheese, salt, pepper and olive oil in a bowl; set aside.
In a large skillet, cook bacon until just crisp; crumble; set aside.
Cook pasta according to package directions. Drain pasta; while pasta is piping hot, add egg / cream sauce into pasta; stir over low heat 1- 2 minutes until fully incorporated.
Remove from heat; stir in bacon, reserving some to garnish the top. Sprinkle on chopped chives before serving.
Tip: toss in some left over chicken, turkey or veggies, if desired.
