Broccoli Cheese Stuffed Chicken Breasts

Description

People who love broccoli will love this broccoli cheese stuffed chicken breast recipe. Surprisingly the red bell pepper really brings out wonder flavor of the other ingredients. Serve it with rice, mashed potatoes or roasted potatoes.

Ingredients

3 large chicken breasts
salt and pepper, to taste
1 1/2 t. garlic powder, divided
1/4 t. paprika
1 c. finely chopped broccoli florets
2 T. water
1/2 c. finely diced red bell pepper
1 c. mild cheddar cheese
1 T. mayonnaise (or sour cream or Greek yogurt)
2 T. olive oil

Preheat oven to 425 degrees.

Use a sharp knife to cut a slice through the middle of the chicken breasts, but not all the way through, creating a pocket for the filling. Season all sides of the breasts with salt, pepper, paprika and 1/2 t. garlic powder.

Filling:
Place the broccoli in a microwaveable dish; add about 2 T. water; cover with plastic wrap; microwave for 1 minute; drain off any excess water. Add the bell pepper, cheddar cheese, mayonnaise, remaining garlic powder; salt and pepper, to taste. Mix until combined; evenly divide mixture between the chicken breasts, using a wooden toothpick to secure, if necessary.

Heat a large, oven safe skillet, like a cast iron skillet, over medium heat; add the olive oil. Sear chicken 3 - 4 minutes per side.

Cover skillet with foil; bake 15- 17 minutes, or until chicken reads 165 degrees. Let rest, covered for 5 minutes before serving.

4-6 servings.

*For large chicken breasts, 1/2 of a chicken breast is 1 serving.

**To make it WW friendly, use reduced fat mild cheddar and Hellman's light mayonnaise, keeping all ol the measurements and other ingredients the same as written. It will be 4 points for 1 whole chicken breast.
