Whether you serve this as a side dish or perhaps as a main dish, everyone will love this rice. It's delicious and flavorful and great used in a rice bowl, burritos, or as a side dish in any Tex-Mex dinner.
2 T. cooking oil
1 small onion, finely diced
1 clove garlic, minced
2 c. long grain white rice or long grain jasmine rice
1/2 T. chili powder
1/2 t. cumin
1/4 t. oregano
3 c. water
1 t. salt
2 green onions, sliced for serving
Add oil, onion and garlic to a medium sauce pot; sauté onion and garlic over medium heat until onions are soft and transparent. Add uncooked rice, chili powder, cumin and oregano; continue to stir and cook for about 2 minutes to toast the rice and spices. The rice should be making crackling noises.
Add water and salt; stir; cover; turn heat to medium-high; allow it to come to a boil. As soon as it reaches a full boil, turn heat down to low, or slightly above low; simmer for 15 minutes. Turn heat off; let sit for 10 minutes without removing the lid. Fluff the rice with a fork.
Serve sprinkled with sliced green onions on top.
