This dish is certainly not for someone watching their weight. But, it's healthier because it's made with ground turkey, and somewhat decadent because of the cheeses. It's much like meatloaf and is served with cheese and marinara on top.
1 lb. 93% lean ground turkey
1/3 c. seasoned breadcrumbs
3 T. grated Pecorino-Romano cheese
1 large egg
1 clove garlic, crushed
2 t. tomato paste
1 T. freshly minced parsley
1/2 t. kosher salt
1/3 c. marinara plus more for serving, if desired
1/4 c. shredded Mozzarella cheese
grated Parmesan cheese, for topping
Preheat oven to 350 degrees.
In a medium bowl, combine turkey, breadcrumbs, Pecorino-Romano cheese, egg, garlic, tomato paste, parsley and salt; gently mix to combine. Form into a loaf, slightly flattened at the top so that the sauce and cheese stay on, placed on a non-stick baking sheet.
Bake uncovered 50 - 55 minutes, or until cooked in center and internal temperature is 160°F. Top with marinara and Parmesan cheese; bake 3 - 5 minutes until sauce is hot and cheese is melted.
Serve with more warmed marinara sauce, if desired.
