Slow Cooker Onion Soup Mix Meatloaf

Let your slow cooker do the work for a great tasting meatloaf. It's simple to make it and it's full of onion soup flavor.

2 eggs, beaten
1/2 c. milk
1/2 c. ketchup
3/4 c. dry breadcrumbs
1 oz. packet Lipton onion soup mix
2 lb. ground beef

*If wanting to freeze the meatloaf before cooking, follow freezer instruction BEFORE cooking.

In a medium bowl, stir together eggs, milk, ketchup, breadcrumbs and dry soup mix. Use clean hands to add beef; combine wet egg mixture with beef until just combined. Don’t over mix it.
Shape into an oval loaf shape in a 6 qt. or larger slow cooker. Cover; cook on LOW for 5 hours.

Use a spoon to ladle out and discard fat that surrounds the meat loaf.

Makes 1 loaf, 4 - 6 servings.

*Freezer Instructions:
Write the date and cooking instructions from below on a zip lock bag. Mix meatloaf as directed. Place the meatloaf mixture in the bag that has been set in a reusable foil loaf pan to keep the meat in a loaf shape while freezing. Squeeze all the air out of the bag. Place the meatloaf in the freezer, leaving it in the loaf pan. Freeze for up to 1 month.

To cook after being frozen:
Place the frozen meat loaf still in the pan, in the refrigerator to thaw. 36 hours is about the perfect amount of time it takes to thaw. Carefully place the meatloaf in the slow cooker, trying to keep it in the loaf shape. Cook as directed above.

TIP: Crumble foil balls and place in bottom of slow cooker, then place the meatloaf on a sheet of foil that has been punctured with a fork in several places, allowing the grease to drain away from the meatloaf.
