Cold weather calls for warm, comforting food and this soup will do that. It's delicious and satisfying and very easy and quick to prepare.
1 lb. ground beef
1 small onion, diced
1 t. minced garlic
14 oz. can Italian style tomatoes
46 oz. can tomato juice
2 - 14 oz. cans beef broth
12 oz. bag mixed frozen vegetables
2 potatoes, peeled and diced
1 t. seasoned salt
1 t. Worcestershire sauce
black pepper, to taste
Cook ground beef until no longer pink; discard excess grease. Add onion; saute 5 minutes; add garlic; saute 30 seconds; add tomatoes; cook for a few minutes.
Add remaining ingredients; cook for 15-20 minutes or until potatoes are tender.
