Description

These unique pizzas are a combination of two of your favorite comfort foods, tacos and pizza. They're loaded with seasoned taco meat, refried beans, cheese, enchilada sauce amd toppings of green onion, black olives and diced tomatoes baked on top of crisp

Ingredients

1 lb. lean ground beef
1 packet taco seasoning
1/2 c. water
6 medium flour tortillas
16 oz. can refried beans
10 oz. can red enchilada sauce
1 c. shredded Cheddar cheese
1 c. shredded Pepper-Jack cheese
1 Roma tomato, diced
1-2 green onions, diced
1 small can sliced black olives, drained

Preheat oven to 375 degrees F. Spray 2 baking sheets with non-stick cooking spray; place the tortillas on the baking sheets.

When oven is hot, crisp tortillas by baking for 3-5 minutes; flip over; bake another 2-5 minutes until golden.

While tortillas are crisping, cook ground beef until no longer pink; discard excess grease; stir in taco seasoning and water; simmer 10 minutes.

For easier spreading, heat the refried beans in the microwave following directions on can.

Assembly: Spread a thin layer of warmed refried beans on one tortilla; top with one-third of the beef; place another tortilla on top; spread on about 3 T. enchilada sauce; sprinkle on some of both cheeses; add diced tomato, green onion, and black olives.

Repeat with the remaining ingredients, making 3 pizzas in total.

Bake for 5 minutes, until cheese is bubbly.

Let cool slightly, then slice and serve.

Makes 3 pizzas.
