Description
Make this chicken dish for a progressive dinner, picnics, small or large gatherings. It is definitely a people pleaser!
Ingredients
- (per serving):
- 1 boneless, skinless chicken breast
- taco seasoning
- 1/2 red potato (peeled and thinly sliced)
- 2 tsp salsa
- 2 tsp shredded cheese
- 1 tbs olive oil (to brown the chicken)
- black olives
Steps
- Preheat oven to 400 degrees.
- Season the chicken with a coating of taco seasoning and rub it into the chicken. Brown the chicken in a very hot skillet. Just make the outside of the chicken get a bit of color. Do not cook through. (This step could be skipped if you are short on time)
- On a square of tin foil, lay the potato slices in the center and top the potatoes with the chicken breast. Spread two teaspoons of salsa on the top of the chicken and sprinkle with shredded cheese.
