Low-Carb California Tortilla Pizzas

Description

These pizzas make a delicious snack, lunch or dinner. The low-carb tortillas make a great crispy crust and the fresh veggies make it healthy.

Ingredients

  • 2 tsp. olive oil
  • 1/2 cu. chopped onion
  • 1/2 cu. chopped green bell pepper
  • 2 -6 inch low-carb flour or whole wheat tortillas
  • 1/4 tsp. dried oregano
  • 1/8 tsp. garlic powder
  • 1 tomato, sliced
  • 1/2 cu. shredded mozzarella cheese

Steps

  1. Preheat oven to 400 degrees F.
  2. Heat oil in a small skillet over medium heat; cook and stir onion and green pepper until tender, about 5 minutes.
  3. Place tortillas on an ungreased baking sheet. Top with onion mixture, oregano, garlic powder, tomato, and mozzarella cheese.
