These potato nachos are a different take on regular nachos. Instead of nacho chips, use sliced baked potato. You will get rave reviews for this meal!
baked potatoes
1 T. cumin
1 T. chili powder
olive oil
1 large ziplock bag
your choice nacho topping
any other toppings of your choice like green onions, yellow onions, jalapeno, black olives etc.
Preheat oven to 350 degrees.
Peel and slice potatoes ¼ inch thickness. Place in the ziplock bag, drizzle the oil in it, then add t spices and shake and mix it up, until all potatoes are evenly coated.
Grill in oven or fry them until they're golden brown on both sides, about 10 minutes on each side.
Layer potatoes in an ovenproof casserole dish, with the cheeses and toppings.
Bake for a few minutes to melt together.
Top with sour cream, and any of your favorite toppings. Serve hot.
