Enjoy a wonderfully applewood spiced chicken served with a watermelon-mango salsa that you won't be able to resist. Serve with your favorite pasta salad.
4 boneless skinless chicken breasts
2 t. applewood rub grill seasoning
1 T. olive oil
Salsa:
2 c. watermelon, cubed, seeded cut in chunks
1 c. mango, cubed
1/4 c. red onion, finely chopped
2 T. fresh cilantro, chopped
1 small jalapeño chile, seeded, finely chopped
1 T. lime juice, freshly squeezed
1/2 t. sugar
1/4 t. salt
Place chicken on a platter. Mix grill seasoning and oil; spoon over chicken. Cover; refrigerate 1 hour.
In medium bowl, mix salsa ingredients. Cover; refrigerate to blend flavors.
Preheat grill. Brush oil on grill rack.
Grill chicken over medium heat. Cover grill; cook 10 to 12 minutes, turning once, until juice of chicken runs clear at thickest part.
Serve chicken topped with salsa.
