Sometimes you need to change up taco night and serve something a little different. Try this quick and easy taco salad. You get all of the taste of tacos but with less mess and tastier too!
1 lb. lean ground beef
1 large onion, chopped
1/2 c. salsa
2 T. taco seasoning
1/4 t. pepper
1 c. shredded cheddar cheese
2 eggs
1 c. milk
1/2 c. biscuit/baking mix
Optional toppings: sour cream, chopped tomatoes, jalapenos, black olives, lettuce, green onions
Preheat oven to 400 degreess.
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
Stir in salsa, taco seasoning and pepper. Transfer to a greased 9 inch pie plate and sprinkle with cheese.
In a large bowl, combine eggs, milk and biscuit mix until combined then pour over cheese.
Bake 25-30 minutes or until a knife inserted near the center comes out clean.
Garnish with toppings, if desired.
Makes 6 servings.
