In under an hour, you can have a hearty, delicious breakfast or brunch. It is even good enough for a quick weeknight dinner!
10 oz. cheddar cheese, shredded
4 oz. can chopped green chiles
1 medium Roma tomato, seeded and diced
6 green onions, chopped
6 eggs
1/2 c. heavy cream
1/2 t. salt, or to taste
pepper, to taste
hot sauce, optional
Preheat oven to 350 degrees. Grease a 10 inch pie plate.
Put cheese, chiles, diced tomato and green onions in the prepared pie plate.
In a medium bowl, whisk together eggs, cream, salt and pepper. Mix to combine. Pour into the pie plate.
Bake about 35 minutes or until the center is set. Let cool 10 minutes before serving.
Serve with hot sauce, if desired.
