A homemade version of your favorite Mexican restaurant dish.
15 oz. can chicken, drained and flaked
4 oz. can green chilies, drained
4 oz. shredded Monterey Jack cheese
1/2 c. green onions, cleaned and chopped
8- 9 inch flour tortillas
oil
lettuce, shredded or chopped
salsa
sour cream
White Mexican dipping cheese, optional
Combine first 4 ingredients in a bowl. Wrap tortillas in wet paper towels and microwave for 5 seconds or until hot. Brush both sides with oil. Place 1/2 cup mixture on each tortilla. Fold in the sides and then the top and bottom to form rectangular shape. Place on lightly greased baking sheet. Bake at 425 degrees for 10 minutes or until light brown.Serve on a bed of lettuce. Top with salsa, sour cream or White Mexican dipping cheese warmed and drizzled on top.
