Description
Bump up the traditional Mexican beef casserole with a bag of potato chips! Your whole family will be glad that you did!
Ingredients
- 1 family size bag chips, your choice of flavor
- 1 onion, sliced, diced or grated
- 1 lb. lean ground beef
- 2 cloves garlic, minced
- 1 – 2 t. chili powder
- 1 c. salsa, your choice
- 1 c. sour cream, regular or reduced-fat
- 1 can cream of chicken or mushroom soup, regular or reduced-fat
- 2 c. shredded Cheddar or Mexican cheese, regular or reduced-fat
Steps
- Preheat oven to 350 degrees. Grease a 2 quart, 9x9 inch or 8x8 inch casserole dish. Spray foil for top with non-stick cooking spray.
- Place salsa in a strainer to drain while preparing beef.
- In a large skillet, brown the ground beef with onion and garlic. Drain grease. Add chili powder. Stir; emove from heat.
