This is an absolutely delicious chicken recipe. The cooking is quick and easy. Just make sure to marinate the chicken for at least 6 hours.
4 T. olive oil
4 T. tequila
juice of 1 freshly squeezed lemon
1 T. lime zest, from about 2 limes
4-5 cloves garlic, minced
1-1/2 t. ancho chili powder
3/4 t. ground coriander
1/2 t. dried oregano
1-1/4 t. salt
1/2 t. freshly ground black pepper
3 t. honey
4 boneless skinless chicken breasts, pounded to an even 1/2-inch thickness
1 lime, sliced into wedges, for serving
Combine all ingredients except for the chicken breasts in a 1 gallon zip lock bag. Close the bag and squeeze the marinade around to mix.
Add chicken and massage the marinade into the meat until evenly coated. Close the bag and place it in a bowl in the refrigerator; marinate for at least 6 hours or overnight.
Preheat grill to high. Oil grill grates. Place chicken on the grill and spoon any remaining marinade from the bag on top.
Close lid and grill, for 2-3 minutes per side, turn just once.
Serve immediately with lime wedges.
