Delight your family or guests with this scrumptious main dish. It is so good, they won't believe that you made it yourself!
1/2 lb. sliced mushrooms
2 T. butter
1/2 c. sliced green onion
1 c. green enchilada sauce
3 oz. cream cheese
1/4 t. ground cumin
1/4 t. crushed oregano leaves
1/2 lb. cooked baby shrimp
1/2 lb. imitation crab meat
8 flour tortillas
1 1/2 c. shredded Monterey Jack cheese
Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish.
Saute mushrooms in butter. Turn heat to low; add green onions, 1/4 c. green enchilada sauce, cream cheese, cumin, oregano, shrimp and crab meat. Stir until cream cheese melts. Stir in 1/2 cup Monterey Jack cheese. Remove from heat.
Spoon 1/4 - 1/3 cup shrimp-crab mixture over each flour tortilla. Roll up. Place seam side down in the baking dish. Pour remaining green enchilada sauce over enchiladas. Sprinkle with remaining 1 cup Jack cheese.
Bake, uncovered 20 minutes.
