This is a delicious dish to make for those special times when you want something a little different. This meal is made with shrimp, but feel free to substitute cooked pork, beef or chicken as well.
Cheese sauce:
2 T. butter
2 T. flour
3 jalapeno peppers, chopped
1 1/3 c. milk
4 oz. sharp cheddar cheese
salt and pepper, to taste
Shrimp:
12 oz. small shrimp, peeled
1 T. crushed cumin seeds
1/2 t. salt
1/2 t. pepper
1/4 c. liquid from salsa
Salsa:
1 large tomato, chopped
1 finely diced jalapeno
1/2 small onion, diced
1 T. cilantro
1/2 freshly squeezed lime juice
salt and pepper, to taste
3 burrito size tortilla shells
Salsa:
Mix together salsa ingredients; set aside.
Cheese sauce:
Melt butter in saucepan. Add flour; stir and cook for one minute. Add diced jalapeno. Cook over medium-low about 5 minutes, stirring often.
Add milk; increase heat to medium. Cook about 5 minutes or until beginning to heat through, stirring occasionally. Increase heat, stirring constantly until bubbly. When thickened, reduce heat. Begin stirring in cheese, a little at a time, until melted. Stir in about 1/2 cup homemade fresh salsa.
Shrimp:
Cook shrimp and all seasonings until shrimp is no longer pink; drain if needed.
Preheat oven to 400 degrees. Grease a pie pan.
To build pie, place about 1/2 cup cheese sauce in the bottom of the greased pie pan. Top with burrito size tortilla shell.
Layer 1/2 of the shrimp, 1/2 cup cheese sauce, and 1/2 of the salsa. Top with another tortilla shell.
Repeat layer, leaving a little cheese sauce for tthe op layer. Add one more shell and remaining cheese sauce.
Bake 30 minutes. Allow to rest about 5 minutes before cutting.
