These tostadas are simple to make and so delicious. They make a great appetizer or even a main dish. Top them with diced avodados and/or diced tomatoes for extra flavor.
1 lb. lean ground beef
2 1/2 T. Mexican spice mix or taco seasoning
1 can black beans, rinsed and drained
3 c. baby spinach leaves, roughly chopped
12 tostada shells, corn tortillas or small flour tortillas
2 c. shredded Cheddar or Mexican/Taco blend cheese
diced avocado and diced tomatoes, optional
Arrange 2 racks near the center of the oven. Preheat the oven to 350 degrees.
Cook and crumble the ground beef in a large skillet.
Sprinkle with seasonings as it cooks. When the beef finishes cooking, remove the grease and then add the black beans and the spinach. Remove from the heat and stir to wilt the spinach.
Spread the tostada shells across two baking sheets, divide the beef mixture onto them, and top with cheese.
Place the baking sheets in the oven and bake until the cheese has melted, about 5 minutes.
